A dozen good quality sausages (pork and apple are a recipe favourite)
2 tbsp oil
1 lb potatoes peeled and diced
Butter and milk to taste

Gravy:
Two medium cooking onions, thinly sliced
2 tbsp oil
2 tbsp butter
1 tsp sugar
1 tsp balsamic vinegar
500 mls beef stock
4 tsp corn starch
4 tsp cold water
Salt and pepper

Directions:
Fry sausages in the oil. When cooked place in an oven proof dish and pop in the oven to keep warm. Prepare the mashed potatoes.
In a sauce pan melt the butter and add the oil. Add the onions, cover and cook until onions are soft. Add the sugar and vinegar. Add the stock and simmer for 5 minutes. In a separate bowl mix the water and cornstarch. Add the cornstarch minute to the sauce pan and stir until thickened. To serve place sausages on top of mash and cover with the onion gravy. Enjoy!
