Vegetable or olive oil
2 medium carrots, diced
2 celery stalks diced
1 medium onion, chopped
8 ounces mushrooms, chopped
1 small red potato, diced
2 T. flour
1 ˝ cups chicken broth
3-4 T. chopped dill
˝ cup ˝ and ˝ cream or milk
Smoked salmon, diced. The amount it to your taste.

Directions:
Directions:
Heat oil in a Dutch oven. Add carrots, celery, and onion* and sauté until limp. Add mushrooms, and continue cooking until the liquid has evaporated. Add potatoes and cook for 2-3 minutes more. Add flour and cook, stirring for 1 minute. Add chicken broth and chopped dill. Continue cooking until the vegetables are done. Add cream and smoked salmon. Season with salt and pepper. Mix well and serve.
*You can substitute ˝ cup chopped chives for the onion, in which case add them when the dill is added.
