Ingredients: 1 1/2 lbs sirloin steak, 1 inch thick 1/4 cup canola or vegetable oil 1 clove garlic, crushed 1 tsp salt 1 tsp ground ginger(I use fresh now but Mom"s original called for dry) 1/2 tsp pepper 3 large green or other colorful peppers, sliced into long slices 2 large onions, thinly sliced 1/4 cup light soy sauce 1/2 tsp sugar 1/2 cup beef stock or bouillion 1 can water chestnuts, sliced 1 T cornstarch 4 scallions, cut into 1 inch pieces Hot Cooked Rice

Directions:Freeze steak for 30 to 45 minutes for ease in slicing. Cut into 1/2 inch thick slices . Heat oil in pan and add garlic, salt, ginger and pepper. Saute until garlic is soft-add steak slices. Brown 2 minutes and remove meat. /add green pepper and onions and cook 3 minutes. Return beef to pan and add soy sauce, sugar, stock, water chestnuts, cornstarch dissolved in cold water and green onions.Simmer about 2 minutes or until it thicken. Serve over hot rice |

Notes: The following is a quote from the original recipe which was made by Mom, Toni and Sandy too. "I don't believe Sandy cooks those peppers and onions like that. I believe that she just browns the steak and puts the peppers and onions on top and then the sauce. The Chinese like their veg crispy and a little raw, you know." Mother I am not really sure how Mom had such insight into how the Chinese like their veg, but I thought it was funny.
