1/2 cup salad or olive oil
2 cups thinly sliced onion

3 cloves garlic
1/2 cup celery
1/2 tsp dried oregano leaves
1/4 tsp dried basil leaves
1 bay leaf

4 large ripe tomatoes
1 tsp salt
1/4 tsp pepper
1/2 tsp paprika
1 can tomato paste
dash hot sauce

1/4 lb mushrooms, thinly sliced
3 Tbs parsley
1/3 cup sweet vermouth
scant tsp sugar

Directions:
Directions:
In hot oil in large skillet, sauté onion over low heat, stirring until tender - about 10 minutes
Add garlic, celery, oregano, basil and bay leaf cook stirring for 5 minutes.
Wash tomatoes, remove stems, cut into quarters. Add to onion mixture with salt, pepper, paprika and tomato paste. Bring to boiling, stirring, reduce heat and simmer covered for 30 to 35 minutes, stirring occasionally.
Add mushroom and vermouth, parsley and sugar, simmer, stirring for 15 minutes longer or until sauce is thick. Serve over cooked spaghetti, manicotti and sprinkle with parmesan cheese.
