6 squash - sliced, boiled in salted water and mashed
1 onion sautéed w/ garlic in butter
2 eggs
1/3 cup milk
3/4 cup mixed cheddar cheeses
salt/pepper

One sleeve crushed Ritz crackers/mixed with 1/2 stick melted butter

Directions:

Mix all the above ingred. except cracker crumbs.
Put into casserole and top with sleeve of buttered Ritz crumbs.
Bake at 350 degrees for approx. 30 min.

In use 3 zucchini and 3 yellow. You can use all yellow crookneck, if preferred.
