Ingredients: Cinnamon Rolls: 1 package active dry yeast 1 c. warm water 2 Tbsp. sugar 1 stick butter, melted 1 c. milk, warmed 1/2 c. sugar 2 eggs 1 tsp. salt 2 c. flour (and additional flour, until mixture pulls away from sides of bowl) 3/4 stick butter, melted Brown sugar Cinnamon
Icing: Confectioner's sugar Milk Dash vanilla extract

Directions:Cinnamon Rolls: Dissolve yeast and sugar in warm water Allow to stand for 15 - 20 minutes Using an electric mixer with a dough hook, mix dissolved yeast, butter and milk on low for 1 minute Slowly add 1/2 c. sugar Allow to combine, then add eggs Allow to combine then add salt and flour Mix until smooth and slowly add additional flour until dough pulls away from the sides of the bowl Turn dough out onto floured surface and knead until smooth and elastic, approximately 4 - 6 minutes Lightly oil a bowl and put dough in Flip dough once to oil both sides Cover with plastic wrap and allow to rise for 1 hour or until doubled in size Roll out in rectangle and spread 3/4 stick, melted butter, brown sugar and cinnamon on surface of dough Roll up from long edge, making sure roll is tight Cut into desired thickness, and place in lightly oiled 9 x 13 inch baking pan Allow rolls to rise again about 45 minutes - 1 hour in unheated oven Bake at 350º for 30 minutes or until golden brown Let cool and spread with icing
Icing: In large bowl, add confectioner's sugar, milk and dash of vanilla extract Stir together with fork and keep adding confectioner's sugar, until the desired consistency |
