4 oz. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tsp. baking powder
1 lb. Monterey Jack cheese, grated
4 c. chopped fresh spinach
Directions:
Directions:
Preheat oven to 350º
Melt butter in 9 x 13 inch pan
Beat eggs
Add flour, milk, salt and baking powder
Add cheese and spinach, mixing well
Spread in pan
Bake for 35 minutes
Let cool 30 minutes before serving
Cut into squares

Freezes well in plastic bags. Defrost and warm for 5 minutes in 350 degree oven
