1 14 oz can black beans, rinsed and drained
1 14 oz can corn
1 can Rotelle
1 tbsp minced garlic
1 medium red onion, diced
salt and pepper (to taste)
1 lime, juiced
1 tsp ground cumin
2 tbsp fresh cilantro

Directions:
Directions:
Mix all ingredients in medium sized bowl with a lid. Place in refrigerator to chill. For the best flavor make this the day before you need it so the flavors completely blend. This can be served "wet" like regular salsa or strain before serving as a chilled side.

For a slightly different take on this recipe you can substitute lemon for lime. This recipe easily doubles. It can be served with tortilla chips or celery sticks or as a salad topping. Enjoy!
