2 c of steamed sweet potatoes, mashed
1 can (15 oz) creme of coconut, warmed (see note)
1/4 to 1/2 warm milk
honey
salt

Directions:
Mash sweet potatoes. In a small saucepan, heat coconut creme, being careful not to boil. Stir the hot coconut creme and the warm milk into the mashed potatoes and whip until the mixture has the consistency of soft mashed potatoes. Season to taste with honey and salt. Serve warm. Serves 8=10
