Ingredients: 1 lb butter fish or salmon 1 lb fresh pork shoulder 1 tbs Hawaiian or rock salt 1 lb boneless chicken or turkey 3 bunches of fresh spinach 32 ti leaves or green corn husks (see note)

Directions:Cut the meat and fish into approximately 1 inch cubes. Sprinkle with salt and set aside. Wash the spinach and ti leaves (or green corn husks from fresh ears of corn) Trim the stems from the spinach. remove the stiff rib from the underside of the ti leaves by cutting partially through the rib and stripping it from the leaves.
Arrange three to four ti leaves over one another to form a circle. Wrap a piece of fish, pork, and chicken in 8 or 10 spinach leaves and place the bundle in the center of the ti leaf circle. Pull up the ti leaves and tie the ends to form a packet. Repeat to make 8 to 10 lau laus.
To cook, steam the lau laus for 2 hours in a pressure cooker for 20 to 30 minutes at 15 lbs of pressure. Let pressure drop on its own.
Note: If using corn husks instead of ti leaves; you will need to cut things a bit smaller and make more packets. |
