1 Pork Loin - approx. 5 lbs.
1 8 oz. block of cream cheese-softened
sliced Jalapeņos (fresh or pickled from Jar)
Accent
Garlic Pepper
1 pkg. bacon slices

Directions:
Directions:
Take pork loin and slice down middle 3/4 way through. Season meat with spices of your choice. (above)
Take softened cream cheese and stuff evenly down middle of meat.
Layer sliced jalapeņos over cream cheese.
Close the meat.
Place bacon slices around the entire pork loin securing each slice of bacon with a toothpick, if necessary. Be sure entire pork loin is covered.
Let stuffed meat sit in refrigerator for a few hours or overnight (if you have time).
Place meat with closed cut side up in 350 oven. Bake for 45 min or 1 hour until meat thermometer comes out in meat at 160 degrees.
Let meat sit on counter for 10 minutes.
Slice and serve.

** If using Beef Tenderloin - follow exact directions EXCEPT
check meat after 30 minutes and watch thermometer. Recheck every 10 minutes until thermometer reaches 130 degrees for medium rare - 140 degrees for medium. Let rest 10 minutes before slicing.
