10 oz. pitted, chopped dates
1 teas. baking soda
1 stick of butter at room temperature
5 Tbls. sugar
2 large eggs
1 1/2 cups all-purpose flour
Pinch of salt
1 teas. baking powder
1 teas. vanilla
Toffee Sauce:
1 cup heavy cream
1 cup light-brown sugar
1/4 c. (1/2 stick) butter
Whipped cream for topping

For the Pudding cake: Preheat the oven to 350. Butter or spray a 8 x 8 baking dish. In a medium bowl, pour 1 cup boiling water over the dates, and add the baking soda; stir and let sit.
With a mixer, cream the butter and sugar until fluffy. Add the eggs one at a time, beating until smooth. In a bowl combine the flour, baking powder and salt. With the mixer on low speed, add the flour mixture, a little at a time, until just combined. Add the dates, baking soda and water mixture and vanilla; blend. Place in prepared pan. Bake until the top feels firm, about 30-35 minutes.
Sauce: In a medium sauce pan, bring the heavy cream and light-brown sugar to a boil, stirring occasionally. Add the butter. Boil for 3 minutes. Remove from heat. Poke cake with knife. Cover with sauce. Refrigerate.
Serve small portions with whipped cream.
