8 oz. lean, boned pork loin, cut into 1/2 inch pieces
1/4 tsp. salt
1/4 tsp. coarsely ground pepper
2 Tbsp. sugar
2 Tbsp. cider vinegar
1/3 c. dry white wine
1/3 c. fat-free chicken broth
1 c. red bell peppers
1 c. Granny Smith apples (about 1/2 lb.). thinly sliced and peeled
1 tsp. grated and peeled fresh ginger
1 c. (1 inch) sliced green onions
1 tsp. cornstarch
1 tsp. water
1 1/2 c. hot cooked rice

Place a large nonstick skillet coated with cooking spray over medium-high heat until hot
Add pork and saute for 5 minutes or until done, browning on all sides
Remove pork from skillet and sprinkle with salt and pepper
Set aside; keep warm
Add sugar and vinegar to skillet; cook 1 minute
Add wine and broth; cook for 30 seconds
Add green onions; stir-fry for 2 minutes or until apples are tender
Combine cornstarch and water in a bowl; add to skillet
Bring to a boil
Cook for 1 minute, stirring constantly
Return meat to pan and cook until thoroughly heated
Serve with rice
