Cake:
2 cups sugar
1 1/2 c. Wesson Oil
4 eggs
2 cups flour
2 t. baking powder
2 t. soda
1 t. cinnamon
3 c. grated carrots (1 lb.)
1 c. chopped pecans
Icing:
1 lb. confectioner Sugar
8 oz. cream cheese, softened
1 stick margarine or butter
2 t. vanilla

Directions:
Directions:
Cake: Cream sugar and oil until light and fluffy. Add eggs and cream well. Sift flour, baking powder, soda and cinnamon and nuts. Pour into cake pans or large 9 x 13 dish. Bake at 350 degrees for 30-40 minutes until toothpick comes out clean.
Icing: Mix until creamy, spread between layers or over top of cake.
