2 Tbls. Granulated sugar
1 Tbls. Kosher Salt
1 Tbls. minced garlic
1 Tbls. hot pepper flakes
1 Tbls. ground black pepper
1/4 cup extra-virgin olive oil
Drizzle -
1/4 cup extra-virgin olive oil
1/4 Balsamic vinegar

Directions:
Directions:
In small bowl, combine first 6 ingredients to make a paste.
Rub paste all over the steak or chops coating evening.
Put meat in plastic bag or wrap in plastic wrap and marinate 12 hours or overnight is better.

One hour before grilling, remove meat and bring to room temp.
Cook on grill 25 minutes, turning every 6 minutes to an internal temp. of 120-130 for medium rare.

Mix the 2 drizzle ingredients well, and drizzle 1/2 of mixture over meat.
Allow steak or chops to sit 10 minutes. Serve with extra 1/2 of drizzle.

This dry paste rub is excellent on any meat. Great on rib-eyes or extra thick pork chops!
