8 slices bacon, chopped
1 onion, chopped
4 tbsp tomato paste (or more to taste)
1 cup hot water
2 cans black beans, drained and rinsed
4 cups chicken broth
4 cloves garlic, minced
1 tsp cumin
1/2 tsp Tabasco sauce or hot pepper sauce
1/2 chopped fresh cilantro leaves

Cilantro Lime Cream

1/2 cup sour cream (or 1/2 Greek yogurt)
1 tbsp chopped cilantro
1 1/2 tbsp lime juice
salt to taste

In a large saucepan, saute bacon until crisp. Drain, but leave a few tbsp rendered fat. Add chopped onion and saute until tender. Add tomato paste, hot water, beans, broth, garlic, cumin and pepper sauce. Bring to a boil, reduce heat, cover and simmer 30 minutes.

Meanwhile, prepare Cilantro-Lime Cream by combining all ingredients in a small bowl. Stir and chill until ready to use.

Remove soup from heat; stir in cilantro leaves. In small batches, puree the soup in a blender, or using an immersion blender puree soup in the pot.

Garnish with Cilantro-Lime Cream
