Refrigerated Tortellini - as many packages as you think you will need
1/2 C Diced Ham
1 can Sliced Mushrooms
1/2 to 3/4 C Baby Peas
1/3 C Heavy Cream for each pkg of tortellini
3 tbsp butter for each pkg of tortellini
1/2 C Parmesan cheese for each pkg of tortellini
Fresh cracked pepper

Boil tortellini in a pot of salted water. A minute before it is finished, add peas to the same pot.

Meanwhile dice up ham and drain mushrooms.

In a sauce pan over moderate heat, heat about 1/6 C heavy cream and butter just until butter is melted. Be careful not to scorch or burn heavy cream.

When tortellini is cooked, drain and put it back in the same pot. Add ham, mushrooms and the heavy cream. Mix well. Add another 1/6 C heavy cream and the parmesan cheese. Sprinkle with freshly ground black pepper.

If you think it needs more heavy cream, go ahead and add it. Just remember the ingredients listed are for 1 pkg of tortellini. If you're using 2 or 3 pkgs, you have to double or triple the amount of heavy cream, butter, and parmesan cheese.

This recipe is very flexible. If you don't like peas or mushrooms, don't add them. You can add more or less ham, mushroom and peas as you like. If you want a meatless dish, skip the ham.
