1/4 lb butter
8 oz cream cheese
1 1/2 tsp. vanilla
7 oz coconut
2-1 lb boxes powdered sugar

12 oz semisweet chocolate
1/3 bar parafin wax

Directions:
Directions:
Soften butter and cream cheese to room temperature. Mix together with vanilla, coconut and powdered sugar. You need to use your hands to do this. Refrigerate for at least 1 hour. Roll into small egg shaped balls. Refrigerate again until next step is ready.

Melt the chocolate and wax in a double boiler or over very low heat. Insert a toothpick into ball and dip in melted chocolate. Place on wax paper and refrigerate until set.

You can decorate the chocolate eggs with cake decorating set - makes leaves with a flower in the center.

Plain eggs can be rolled in cinnamon sugar and are then called Irish potatoes!

This recipe came from Brian's first grade teacher, Sister Judy. Funniest thing was that the following year she called me for the recipe when Melissa was in her class. She had lost the recipe during the course of the year!
