1 lb. Chicken or Veal cut into large pieces
3 or 4 Red or Green Bell Peppers (sliced into strips)
1 Large Jar of Sliced Mushrooms
1 Onion (sliced thin)
2 Hot Cherry Peppers (or crushed red pepper flakes)
Oregano, Garlic and Basil to taste
1 Large Can of Italian Tomatoes (whole)
1 Large Can of Italian Tomatoes (crushed)
Small amount of Olive Oil

Directions:
Directions:
In a large pot brown meat in a small amount of Olive Oil, do NOT overcook.

Add both cans of tomatoes plus seasonings and cook on low heat (simmer) for 1 1/2 hours.

Add the rest of ingredients and cook on low heat for another hour or until peppers are tender.

Serve over pasta or rice.
