1 c. Canned Pumpkin
1 c. White Sugar
1/2 c. Vegetable Oil
1 Egg
2 c. All-Purpose Flour
2 tsp. Baking Powder
2 tsp. Ground Cinnamon
1/2 tsp. Salt
1 tsp. Baking Soda
1 tsp. Milk
1 tbsp. Vanilla Extract
2 c. Chocolate Chips

Mini Cupcake/Muffin liners

Directions:

Preheat Oven to 350º F.

Combine Pumpkin, Sugar, Vegetable Oil and Egg in a bowl.

In a separate bowl, stir together Flour, Baking Powder, Ground Cinnamon, and Salt.

In another bowl, dissolve the Baking Soda in the Milk and then mix everything together in 1 bowl.

Add Vanilla and Chocolate Chips.

Drop spoonfuls into mini Cupcake/Muffin liners in a muffin pan and bake for about 10 minutes or until lightly brown and firm. Toothpick should be clean after inserting into a cookie.
