5 c. diced chicken (cooked)
1/2 c. mayonnaise
1/2 c. plain yogurt
1 can cream of chicken soup
2 c. chicken broth
1 c. chopped celery
1 chopped onion
8 oz. can sliced water chestnuts (but up into smaller pieces)
1 c. sliced almonds
4 c. cooked rice
2 Tbsp. lemon juice
1 tsp. salt
1 tsp. WHITE pepper (or more to taste)

top casserole with the following:
1/2 c. slice almonds
3 c. corn flakes
2/3 c. butter

Directions:
Mix together casserole ingredients, and place in large buttered casserole.

Mix together topping items listed: 1/2 c. almonds, 3 c. corn flakes, 2/3 c. butter. Put on top of casserole.

Bake at 350º for 40 minutes.

This makes two very full 3-quart casserole dishes! Dish is essentially all white, so you'll want to add some color to your dinner with a salad or green veggies on the side. This dish refrigerates well and freezes well. Reheating in the microwave works fine, after the initial baking.
