3 garlic cloves, chopped
1 large onion, chopped
2 15 oz. cans of red beans, rinsed and drained
4 carrots, thinly sliced widthwise
1 celery stalk, chopped
1 zucchini, cut into half inch slices
2 24 oz. jars of tomato sauce
1 cup of vegetable bouillon
1/4 cup hot chile peppers (optional)
1 tbsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp. oregano
Salt and pepper to taste

Spray the bottom of a large soup pot with cooking spray, and saute the onions and garlic over medium heat till the onions are translucent.
Stir in the beans, carrots, celery and zucchini. Add the tomato sauce, bouillon, peppers, and seasonings and bring to a boil.
Reduce heat to a simmer, cover and cook for 35 minutes, stirring occasionally.

1. This chili is delicious served on its own, or over rice or noodles.

2. For something special, top each serving with a dollop of no fat sour cream and a tablespoon of sherry. Mouthwatering!
