1 pound of young green beans
1 ripe mango
1 shallot minced
1 garlic clove minced
2 tsp. granulated sugar
1 tsp. chicken bouillon powder
½ cup canola oil
2 tsp. sesame oil
Salt and pepper to taste

Directions:

Wash and trim the beans. Cut into bite size pieces.
Place beans in a 2 quart microwave-safe bowl. Cook on high till crisp yet tender (2-3 minutes).
Remove and run under cold water to bring to room temperature; then drain.
In a large mixing bowl, remove the skin from the mango and cut the fruit into bite size pieces. Capture all juices in the bowl.
Add shallot, garlic powder, bouillon powder, canola oil and sesame oil to the mango and gently toss.
Fold in the green beans. Season with salt and pepper to taste. Chill to let the flavors develop.
