Ingredients: 1 spaghetti squash 2 large fresh tomatoes, chopped 1 can slice black olives (more to taste) 3/4 cup chopped onion 1 Tbsp. minced garlic 1/2 cup fresh basil, chopped 3/4 cup feta cheese, crumbled 1/2 cup freshly grated Parmesan (not powder) optional 1 tsp salt 1 tsp pepper 2 Tbsp. butter or olive oil

Directions:Prepare spaghetti squash: cut squash in half lengthwise and scrape out seeds and pulp with large spoon. Spray cookie sheet or baking pan with vegetable spray and place squash face down on pan. Bake at 350 degrees for 45 minutes or until a knife can be inserted into it easily. Let cool. Scrape out "spaghetti" with a fork into a dish.
In saucepan, melt butter or heat olive olive oil and sauté onion and minced garlic until soft. Add chopped tomatoes, black olives, salt, pepper and chopped fresh basil to pan with onions and garlic. Heat through.
Pour hot vegetables over spaghetti squash. Add feta and Parmesan cheese. Toss well. |

Notes: Parmesan cheese is optional but makes it much richer. Adjust onion and garlic to taste. Enjoy!
