5 lbs. fish
Curry to taste
Oregano to taste
Garlic to taste
Cilantro to taste
3 lemons
Salt and pepper to taste
Oil to fry

Sauce:
2 carrots
1 chayote
4 large onions
1/2 lb. green pepper
Sweet pepper
Stick cinnamon
Cloves
1 bottle white vinegar (1 pint)

Directions:
Directions:
Clean fish properly with lemon. Season with salt, pepper, curry, oregano, garlic and cilantro and leave to soak overnight. Then fry in hot oil, brown on both sides. Place in tray and cover with marinated vegetables. Leave for several hours or overnight. Then serve.

Sauce:
Peel and cut carrots and chayote in Julienne strips; slice onion and green pepper; stir fry in small amount of oil for about 3 minutes. Then add the other ingredients and vinegar and cook for another 10 minutes. Remove from heat and pour over fried fish.
