2 quarts whole Milk
2 cups whole Buttermilk
1 teaspoon Kosher Salt

Directions:
Place milk in a large saucepan and bring to a light boil stirring frequently. Add buttermilk all at once and stir for one minute until curds appear. Pour into a large strainer. Drain for 5 minutes. Add fresh chopped herbs if desired. Serve warm or refrigerate for up to three days.
