3/4 c white sugar
1- 8oz pkg cream cheese, softened
5 eggs
1- 14 oz can sweetened condensed milk
1- 12 oz can evaporated milk
1 tsp vanilla extract

Preheat oven to 350º.

In a small, heavy saucepan over medium-low heat, cook the sugar, stirring until golden. Pour into a 10 inch round baking dish, tilting to coat the bottom and sides. Set aside.

Put the eggs, cream cheese, both milks, and vanilla into a blender and blend until smooth. Pour over caramel.

Line a roasting pan with a damp kitchen towel. Place the baking dish on the towel inside the roasting pan. Fill the roasting pan with boiling water to reach halfway up the sides of the baking dish.

Bake in the preheated oven 50 to 60 minutes, until center is just set. Cool one hour on wire rack, then chill in the refrigerator for 8 hours or overnight.

To unmold, run a knife around the edges of the pan and invert on a rimmed serving platter.
