Goat Cheese and Leek Bruschetta Recipe

1 loaf baguette bread
1 10 oz. package of plain goat cheese, softened
3 T butter, softened
1 large bunch of leeks(cut into small slices, cleaned and patted dry.)
1 cup of your favorite Italian salad dressing-I use my homemade white balsamic vinegrette and add a few pimentos, but if you want to use a bottled dressing, go ahead!

Slice and toast on both sides the baguette bread, being careful not to burn. Set aside and mix the softened goat cheese and butter together in a bowl.
Saute cleaned and drained leeks in the dressing over medium high heat until soft and most of the dressing is absorbed. This usually takes about 5/6 minutes. Cool slightly.
When ready to serve, spread a small amount of cheese mixture on bread and top with leeks.
Broil until bubbly and watch this carefully so they do not burn-don't walk away from the oven.
Serve on a platter and watch them disappear.
