1/2 stick butter, melted
1 c. all-purpose flour
1 tsp. salt
1 tsp. pepper
1 (15-oz) can of evaporated milk, divided
1 chicken, cut-up, or 10 - 12 drumstix or thighs
1 can cream of chicken soup
3/4 c. water

Pour melted butter into a 13x9x2 inch baking dish.
In a shallow dish, combine flour, salt, & pepper.
In another shallow dish, add 1/2 cup of evaporated milk. Coast the chicken pieces with milk; then dredge in flour mixture. Place chicken, skin side up, in prepared baking dish. Bake, uncovered, for 35 minutes. Remove from oven and turn chicken. In a small bowl, whisk together the soup, water and remaining evaporated milk. Pour over chicken and return to oven for another 35 minutes. This is good served over rice.
