2 eggs
1 1/2 cups of water
1 1/2 cups of flour
3 Tbsp. sugar
1/4 tsp. baking powder
1/2 tsp. vanilla
1/4 tsp. salt

Filling:
6 oz. cream cheese
6 oz. cottage cheese

Directions:
1. Soften cream cheese. Rinse and drain cottage cheese in a colander. Mix the two together and set aside.
2. In a separate bowl, beat the eggs and beat in water and vanilla. You can do this by hand or by mixer--it doesn't matter.
3. Blend in the dry ingredients and mix well. Mixture should be a thin batter.
4. Brush on a little oil and heat a small non-stick skillet, about 5-inches or so in diameter.
6. Pour enough batter to make a crepe and fry on one side only till set. Slide off each crepe onto a plate, stacking them up, until all batter is used up.
7. Heat butter in a larger skillet, being careful not to burn.
8. Put a spoonful of the cheese mixture on each crepe and roll them up. Fry in butter on both side long enough to melt the cheese mixture.
9. Serve with jam, powdered sugar, syrup, or whatever you like.

My mother used to make these on Fridays during Lent, in the days when we didn't eat meat . . . and our family LOVED them. Jewish-Polish comfort food! She got the recipe from her mother, who probably brought it over from Poland.
