8 oz. feta cheese, crumbled (1 1/2 cups)
1 large ripe tomato, seeded and chopped
3 scallions, thinly sliced included green portions
1/2 cucumber, peeled, seeded and chopped
1/2 c. black olives, pitted and sliced
1/2 c. kalamata olives, pitted and sliced
1/4 c. minced flat leaf parsley
2 T. minced fresh oregano
2 T. snipped fresh dill
Juice of 1/2 lemon
1/3 cup olive oil
Freshly ground pepper

In a medium bowl combine all ingredients and gently mix. Cover and refrigerate at least 2 hours before serving. Serve with your favorite pita or bagel chip!

Use the fresh herbs if you can. They really do make a difference; if not, substitute approximately 2/3 of the amount of dried.
