2 celery ribs, chopped
1 bunch green onions, chopped
1/2 cup butter
3 garlic cloves, minced
1/4 cup minced fresh parsley
1 tsp. sage
1 tsp. thyme
1/2 tsp. poultry seasoning
1/8 tsp. pepper
Salt
12 cups cubed day-old French bread
1/2 lb. bacon strips, cooked and crumbled
1 lb. sliced baby bella mushrooms
2 eggs
1 cup chicken broth
1 8-oz. can mushrooms, drained and chopped
1/4 cup white wine or additional chicken broth

Directions:
Directions:
In a large skillet, saute celery and onions in butter until tender. Add mushrooms and garlic, cook a little longer until mushrooms soften some. Add the parsley, sage, thyme, poultry seasoning, salt and pepper.

Place bread cubes in a large bowl; add mixture above that was cooked in butter and the bacon. In another bowl, whisk together the eggs, chicken broth, oysters, and wine. Add to bread mixture and stir just until moistened. May need a little more chicken broth or wine.

Transfer to a greased 3 qt. baking dish. Cover and bake at 350º for 20 minutes. Uncover and bake 15-30 minutes longer or until lightly browned and a thermometer reads 160º.
