1 lb bulk pork sausage (I like to use R.B. Rice Hot Sausage)
1 ½ cup chopped celery
½ cup chopped onion
½ cup chopped green pepper
1 package dried chicken soup mix
1 can cream of mushroom soup
3 ½ cups boiling water
1 cup uncooked minute rice

Directions:
Brown sausage in skillet, remove sausage, and pour off fat, reserving 2 tablespoons. Cook celery, onions and green pepper in reserved fat until tender. Combine dried soup, mushroom soup, and rice with boiling water in 2 qt casserole dish. Add sausage and sautéed vegetables.

(I like to do get the rice in the boiling water in the casserole dish first, gives rice a little more time to soak)

Cover and bake at 350 for 45 minutes, stirring occasionally. Uncover, bake 15 more minutes.
