2/3 c. packed brown sugar
1 c. mashed overripe banana
1/3 cup buttermilk or sour milk*
3 tbsp vegetable oil
1 tsp vanilla
1 2/3 c. whole wheat flour
1 tsp baking soda
1/4 tsp salt
1 c. chopped walnuts (optional0

*To sour milk, pour 1 tsp vinegar into a measuring cup. Add milk to equal 1/3 cup. Let stand 5 minutes.

In a mixing bowl, combine egg, sugar, banana, buttermilk, oil, and vanilla.
In a small bowl, stir flour, baking soda, walnuts, and salt.
Add to banana mixture; stir just until combined.
Pour into very lightly oiled 8 1/2 x 4 1/2 inch nonstick loaf pan.
Bake at 350 º for 50 to 55 minutes or until tester inserted in center comes out clean.
Let cool in pan for 5 minutes, then trun out onto rack to cool completely.
