3/4 c. all-purpose flour
1/3 c. whole wheat flour
1 tsp. b. soda
2 tsp. ground cinnamon, divided
1/2 tsp. ginger
1/2 tsp. salt
1/4 tsp. gr. all spice
2 tbsp. sugar
1 c. lightly packed br. sugar
1/3 c. light peanut butter
3 tbsp. butter
1 egg
2 tbsp. molasses
1 tsp. vanilla

Pre-heat oven to 350*
Combine first 6 ingredients (1 tsp. cinnamon). Set aside. Combine sugar and 1 tsp. cinnamon in small bowl.(set aside)
Combine br. sugar, peanut butter and butter for 1 minute. Add egg, molasses and vanilla. Beat till smooth. Stir flour mixture into peanut butter mixture. Dough will be stiff. Shape into 1-1/2 balls. Roll in cinnamon sugar. Place 2 in. apart on cookie sheet. Flatten slightly with fork. Bake 7 minutes. They will appear under-baked. Immediately transfer to a cooling rack.
