1 cup shortening
1 cup brown sugar
1 cup granulated sugar
2 well - beaten eggs
1 tsp. vanilla
1 1/2 cups flour
1 tsp. salt
1 tsp. soda
3 cups quick cooking oats
1 cup chopped nuts

Directions:
Directions:
Cream shortening and sugar. Add eggs and vanilla. Beat well.
Sift dry ingredients and add to creamed mixture. Add oatmeal and nuts. Mix well.
Shape into rolls and roll in waxed paper. Chill throughly.
Preheat oven to 350º Slice 1/4 " thin and.placae on an ungreased cookie sheet for 10-12 minutes. Cool on a rack. Do not overbake. They should be light colored. The recipe makes 5 dozen.

This is a favorite childhood cookie made by my mother. You can bake a roll as you want it and always have hot cookies ready in 10 minutes. The dough is tempting to snack on, too, but today we are cautious about eating anything with raw eggs in it.
