1 pound uncooked ground turkey
1/2 cup crushed Ritz crackers (about 13 crackers)
1/2 of a 10-ounce package frozen chopped spinach, thawed and well drained
1/3 cup chopped onion
2 tablespoons Dijon- style mustard
1/4 teaspoon salt
4 slices mozzarella cheese
Garnish with roasted red peppers, drained and cut into strips (I by the bottled kind).
4 wheat or kaiser rolls, toasted

In a large bowl, combine the turkey, cracker crumbs, spinach, onion, mustard, and salt. Shape mixture into four 3/4 inch thick patties. If necessary, cover and chill for 30 minutes.
Grill patties on rack until cooked through.
Top burgers with cheese until cheese is melted.
