6-8 mirlitone (vegetable pear)
4-5 slices bacon chopped
1- white onion chopped fine
1/2 cup shallots chopped
1- pound peeled fresh shrimp
3-4 tablespoons fresh parsley chopped
1- cup wet bread wet bread then squeeze water out
Dash of cayenne
Salt & pepper to taste
3-4 drops tabasco sauce
1/2 cup progresso seasoned bread crumbs
2- eggs slightly beaton

Directions:
Directions:
Boil mirliton until tender, about 20 minutes. Saute bacon, onion and shallots until tender, add shrimp and cook just until shrimp turns pink. Add wet bread, salt&pepper to taste, tabasco sauce and cayenne, cook over medium heat until dressing browns a little. Peel mirlitones and remove seeds, mash add mashed mirliton to skillet. Then add eggs slowly while stirring. Add 1/2 cup seasoned bread crumbs. Mix all togrther well. Pour into greased casserole. Sprinkle with bread crumbs, dot well with butter and bake at 350º until heated through.
