One (No. 2) can crushed pineapple, drained
1 1/2 cup sugar
1 pound brown sugar
1 pound margarine
6 eggs
1 ounce lemon extract
1/2 pound each green and red candied cherries
1 pound pecans, chopped
1 pound pitted dates
4 cup flour
2 tsp. baking powder

Cook pineapple and sugar until thick. Set aside to cool.
Cream brown sugar and margarine. Beat eggs, one at a time, into the sugar and margarine mixture. Add lemon extract to egg mixture. Measure flour and baking powder before sifting. Add 2 1/2 cups sifted flour to the egg mixture. Cut cherries, dates and chopped pecans. Add rest of flour to fruit and nut mixture and mix well. Then add it to egg mixture, add pineapple, and mix.
Grease and flour baking pans. Pour into 2 angel food cake pans. Bake at 350º for 1 hour and 15 minutes. Decorate cake with red and green cherries and pecan halves.

Granny and I made this every year at Christmas. We would make it to give away and for the family to have. Some of the family didn't care for fruitcake but Granny and I enjoyed making them every year.
