One and one-half cups sugar
2 sticks butter, softened
4 eggs
1 tbsp. lemon extract
2 cups all-purpose flour
1 20 ounce can cherry pie filling

Directions:
Directions:
Gradually add sugar to butter in large mixing bowl, creaming at medium speed until light and fluffy. At medium speed, add eggs, one at a time. At low speed, add flour and lemon extract. Spread batter into well greased 17 x 11 x 1 jelly roll pan.
Mark off into 40 squares. Place 1 tbsp. pie filling (approximately 2 cherries) in center of each square. Bake in 350º oven for 20 minutes or until done. While warm, sift powdered sugar over cake. Cool and cut into 40 squares, placing into cupcake type paper liners.
