2 tbsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
˝ green bell pepper, diced
˝ Anaheim pepper, diced
˝ jalapeno pepper, diced
1 lb lean ground beef
1 lb ground pork
1 can black beans
1 can pinto beans
1 can cannellini beans
1 can kidney beans
1 can northern beans
1 28 oz can diced tomatoes
˝ can tomato paste
˝ cup beef stock
˝ carrot, finely grated
2 tsp chili powder
˝ tsp paprika
1 tsp hot sauce (such as Tabasco or Tapatio)
Salt & pepper to taste
Sour cream
Green onion

Directions:
Directions:
1. In a large pot, heat 2 tbsp olive oil over medium heat. Sauté onion and garlic until translucent, about 5 minutes.
2. Add green, Anaheim and jalapeno peppers and sauté for 1-2 minutes.
3. Remove vegetables to a bowl, leaving the liquid in the bottom of the pan. Sauté beef and pork in cooking liquid until meat is browned, seasoning with salt and pepper while browning.
4. Add vegetables back to pot. Add all 5 cans of beans and diced tomatoes, tomato paste and beef stock, stirring to combine.
5. Add grated carrot.
6. Add chili powder, paprika, hot sauce; stir thoroughly to combine.
7. Let simmer, covered, for 30-45 minutes, stirring frequently.
8. Serve with a dollop of sour cream and garnish with green onion. (Optional).

*If the chili is too thick, add additional beef stock.
**Season to taste – if you like it spicier, add more chili powder and hot sauce. If you prefer your chili mild, use ˝ the amount specified and build from there.
