Notes: This jelly is quite unique. Pick mesquite beans just as they are turning color then wash. I like to break beans in half and put into large pot and boil for 30 to 45 minutes. Strain juice through pantyhose. Any juice that is leftover I just freeze to use at a later time. At Christmas I add mint flavoring and green food coloring to make mint jelly, it is wonderful. I can never make enough of this jelly, everyone always asks me for more. If you are wondering what plain mesquite jelly taste like, the best way to describe it is that it tastes like honey. The bees really work the mesquite over and the honey flavor really comes through. You can add other flavorings to this jelly and they all do well it is quite diverse.
