4 cups mesquite juice
1 box Sure-Jell
5 cups sugar
1/4 cup lemon juice
7 canning jars

You will need a large pot so you can allow for foaming, follow the Sure-Jell directions for low pectin fruit. Stir Sure-Jell into juices as you bring it to a full continuous boil that you cannot stir down. Add sugar all at once. Return to full boil, stirring for 2 minutes. Pour into hot jars. Skim off bubbles with a cold spoon. Put into hot bath to seal.

This jelly is quite unique. Pick mesquite beans just as they are turning color then wash. I like to break beans in half and put into large pot and boil for 30 to 45 minutes. Strain juice through pantyhose. Any juice that is leftover I just freeze to use at a later time. At Christmas I add mint flavoring and green food coloring to make mint jelly, it is wonderful. I can never make enough of this jelly, everyone always asks me for more. If you are wondering what plain mesquite jelly taste like, the best way to describe it is that it tastes like honey. The bees really work the mesquite over and the honey flavor really comes through. You can add other flavorings to this jelly and they all do well it is quite diverse.
