2 cups flour
1 T. Baking Powder
2 t. Baking Soda
1 t. ground cinnamon
1/2 t. allspice
1/2 t. ground cloves
1/2 t. ground nutmeg
1/2 t. salt
1 1/2 cups sugar
1 cup canola oil
4 eggs
3 cups peeled and grated carrots
1 cup chopped pineapple
1 cup walnuts, coarsely chopped
1/2 cup dried tart cherries
1/2 cup raisins
1/2 cup coconut


Frosting:
2 pkgs cream cheese, softened
1/2 cup butter, softened
2 1/2 cups powdered sugar
Zest and juice of 1 orange

Directions:
Preheat oven to 350º with the rack in the center position. Line the bottom of 2 8 inch cake pans with parchment paper. In b owl, combine flour, baking powder, baking soda,cinnamon, allspice, cloves, nutmeg and salt. Set aside. In another bowl combine the sugar, oil and eggs with a whisk. Gently stir in by hand the dry ingredients. With a spatula gently fold in the carrots, pineapple, walnuts, cherries, raisins and coconut.
Divide the batter between the two pans. Bake until toothpick comes out clean, about an hour. Cool in the pans on a rack. Run a knife blade around the cakes and unmold.
For Frosting:
With an electric mixer,cream the cheese in a bowl with the butter and powdered sugar. Add the zest and juice of the orange and continue beating until smooth and creamy. Frost your cake.

This is a very light and tender cake and not overly sweet. Be sure not to use a mixer when making the cake batter.
