1 1/2 cups flour
3/4 cup oil
1 large onion
1 bell pepper
2 stalks celery
2 pods garlic
1 tablespoon creole seasoning
2 teaspoons hot sauce
2 chickens
4 links sausage
1 ham steak
Salt to taste
Pepper to taste
2 tablespoons filet

In dutch oven cook flour and oil (roux) to a deep chocolate brown color. In another large pot boil chickens. Reserve liquid and take chicken off of bone. To roux add vegetables and seasonings. Cook until vegetables are soft. Add chicken liquid to roux and cook until liquid and roux is incorporated. Add sausage and ham and cook approximately 30 minutes. Add chicken and bring to boil. When it comes to boil, turn off and add filet. Serve over rice.
