4 stalks celery
4 carrots

Thaw turkey and remove giblet and neck packets from the cavities. Wash turkey and pat dry.

Place sliced onion, celery, and carrots inside the cavity of the turkey and on a rack in a roasting pan. Mix butter, thyme, salt and pepper and rub over and under skin of the turkey.

Bake at 350º until meat thermometer registers a minimum of 165º. If the turkey starts getting too brown, tent with foil. Remove from oven and let rest for 30 minutes before carving.

Use drippings from roasting pan to make gravy.

I called Nanny the first year I was married to find out how to cook a turkey. She forgot to tell me to remove the packet of giblets from the cavity. Is there anyone that has never cooked the turkey with the packet of giblets inside? :)
