1 Tbsp olive oil
3 slices bacon, cut into 1 inch pieces
1 large onion, chopped
2 cloves garlic, minced
1 tsp salt
1/4 tsp black pepper
3 cups chicken broth
1 lb collard greens, woody stems removed and cut into 2 inch pieces.

Directions:
Directions:
Heat oil in a large pot over medium heat. Add bacon and cook until crisp. Add onion and cook until tender, about 5 minutes. Add garlic and cook until just fragrant. Add collard green, chicken broth, salt and pepper. Bring to a boil, then reduce heat to a simmer and cook for about 45 minutes, or until greens are tender.
