1 (16oz) pkg dried peas
1 cup burgundy wine
1 large onion, chopped
1 large red or green pepper, chopped
4 cloves garlic, minced
1 Tbsp worchestershire sauce
1 quart crushed tomatoes
2 cups chicken stock
1/4 (or more) tsp oregano
1/4 (or more) tsp thyme
------------------------------------------------------
1 tsp salt
1/4 tsp black pepper
2 pkgs Goya Ham Concentrate
3/4 cup rice

Directions:
Soak peas overnight, or boil for 3 minutes and let sit for 1 hour. Drain the peas and rinse thoroughly, then return to pot. Add the first nine ingredients and bring to a boil. Reduce heat to simmer and cook for about 3 hours, or until peas are tender. Add the last four ingredients and cook for about 30 minutes or until rice is done.

When the recipe is cooked you can put it in a 9 X 13 pan, top with 8 ounces of your favorite cheese and bake at 350 degrees F until the cheese is bubbly.
