12 corn tortillas
1 large onion chopped
1 large garlic minced
1 cup pitted and chopped black olives
2 cups yellow cheese grated
1/2 tsp. crushed oregano
1 1/2 tsp. pork lard
2 tsp. salt
1 tbsp. flour
2/3 cup pork lard
2 dozen dried red chilies

Directions:
Rinse chilies, slit and wash out seeds; cover with boiling water soaking until pulp is soft, drain (save liquid for further use); grind through chopped with medium knife press through sieve using a small amount of chili liquid to make a medium chili sauce; use lard in a pan on low heat, fry garlic, do not brown, add flour, stir until it browns slightly; add chili sauce, salt and oregano; stir well; let simmer 10 minutes; set aside but keep warm; now beat good and heat 2/3 cup lard; fry tortillas one at a time for just a second on each half of each tortilla; put 1 tsp each of onion, olives, cheese, and chili sauce; when all tortillas are used up; pour the rest of chili sauce over all; sprinkle with rest of onion, olives, and cheese; Bake in 350º F oven for 15 minutes. Serve hot.
