1 cup sugar
3 tbsp. cornstarch
3 tbsp. flour
1 1/2 cup boiling water
1/2 tsp. salt
2 egg yolks
grated lemon rind of 1 lemon
1/2 cup lemon juice

Directions:
Directions:
Sift dry ingredients; add water; cook in double boiler until thick (about 15 minutes); add slightly beaten egg yolk and cook for 2 minutes longer; add lemon juice and rind cook a longer and turn into baked pie shell. Cover with meringue.

This recipe may have been given to Grandma Clara Ready by her mother-in-law (Grandma Anna Ready) because Grandpa Michael Ready loved his desserts especially lemon meringue pie.
