2 cups sugar
2 cups grated zucchini
1 cup oil
3 tsp. vanilla
2 cups flour (do not sift)
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1/4 tsp. baking powder

Beat eggs in mixer; add sugar and beat well; add zucchini, oil, and vanilla mix well. Blend in dry ingredients until mixed well. Pour into 2 greased and floured bread pans. Bake 350º F for 45 minutes.
